- 1 1/2 cups self-raising flour
- 1/2 cup caster sugar
- 120g butter, melted
- 2 tablespoons oil
- 3/4 cup milk
- 1 egg, lightly beaten
- 2 teaspoons vanilla extract
Use cake flour:
The simplest way to do this is using cake flour. In fact, cake flour produces the soft and more tender cupcakes. If you don’t have cake flour at home, you can make it with the combination of all-purpose flour and cornstarch. To make this, simply measure one cup all-purpose flour and then remove two tablespoons of it. Measure two tablespoons corn-starch and add to the flour. Corn-starch contains less gluten than flour, so it’s a wonderful tenderizing ingredient to make cake flour.
Add sour cream:
The other way is just adding sour cream to your batter. One of the ingredients that make your cupcake moist is sour cream or yogurt instead. The acid in sour cream and yogurt tenderizes the gluten in the flour.
Even if your cupcake recipe calls for butter you can add two tablespoons of oil as oil makes cupcakes moister.
Don’t over mix:
Over mixing can lead to cupcakes that are tough and gummy.
Don’t over bake:
An over baked cupcake can be dry and firm. Insert a toothpick into the centre of the cupcake to see if the crumb has set. If it comes out clean, it’s done.
Brush the cupcakes with a simple syrup or other liquids:
First let the cupcakes get cool, then brush or spray some syrup on the cupcakes. Keep them in an airtight container or a cupcake box in room temperature.
